 In one respect old cottages are like old ballads; we have no idea who their authors were. They belong to the countryside and seem just to have grown there, tinged and colored by all the local influences of soil and climate.

Today is Quiche making day.

Recipe as follows:

Ready made pie shell, or if you just want a little more work you can make your own.

Fork your 9 inch pie shell and bake for 10 mins at 400 

Cook sausage about 1/2 a tube, drain

Then lightly brown onion, a nice large one, add 1 tablespoon garlic (or not) your choice

Add your chopped up vegies, I use 1/2 large leek, about 6 large mushrooms sliced, then I add 2 cups of spinach and toss just to wilt. 

You can fry and crumble 7 slices of bacon, or I use about a 4 oz bag of real bacon pieces to mixture, add sausage. 

Your filling is done add to pie shell.  

Wisk 7 eggs adding a cup of 1/2 & 1/2 or milk, pour over mixture.

Add lots of cheese, cheddar, swiss or any you love and its great mixing cheeses as well.

Bake 350 degrees for 1 hour.

YUM!

This pie freezes well also, if you have any leftovers :)
